The nutritional value of matki makes them a regular feature in salads amongst the health-conscious.

Preparation techniques of Matki change depending on the region. In Maharashtra, the moth bean is sprouted to prepare a spicy stew called Usal and is the main ingredient in Misal Pav, a local delicacy.

Fried matki is quite popular in the North of India and is used to prepare dal moth. But the more popular preparation is to turn it into a masala curry, with coconut in some regions. Matki can also be milled and floured to prepare dosa and is commonly used in South India to prepare some lip-smacking dishes during festivals.

The Tata Sampann Advantage

Tata Sampann Matki is unpolished i.e. it does not undergo artificial polishing with water, oil, or leather. It has less than 10% moisture content, which is lower than even AGMARK-specified standards. Low moisture means you get more protein per kg. They are graded and SORTEXed to get rid of unwholesome substances and inorganic foreign matter like stones, sticks, etc.
