100 grams of moth beans contain 23 grams of protein and hence, an excellent source of protein for vegetarians. Matki is especially a popular choice among bodybuilders as it acts as an excellent fuel for muscle-building. Besides the protein, matki also contains Vitamin B, zinc, iron, and calcium. The nutritional value of matki makes them a regular feature in salads amongst the health-conscious.
Preparation techniques of Matki change depending on the region. In Maharashtra, the moth bean is sprouted to prepare a spicy stew called Usal and is the main ingredient in Misal Pav, a local delicacy.
Fried matki is quite popular in the North of India and is used to prepare dal moth. But the more popular preparation is to turn it into a masala curry, with coconut in some regions. Matki can also be milled and floured to prepare dosa and is commonly used in South India to prepare some lip-smacking dishes during festivals.
